Really I have a problem, I love food entirely too much!!!!! I have so many recipes I want to try and simply do not have enough time to make every one, and I don't have the time to work it all off after conquering the world one tasty meal at a time. So in an attempt to eat healthier I looked into clean eating. I love it!!! love the concept of knowing where your food comes from and knowing what different foods do for your body.....
This is my first try at one of the Clean Eating recipes, curried chicken. I have been introduced to curry in the past by my sister in law and so I thought I would have a go at this take on it.
Here is the recipe:
1 cup of brown rice (I used white rice because I had it)
1Tbsp olive oil
1/2 cup chopped scallions
2 cloves garlic, minced
1 lb boneless, skinless chicken breast, cubed
2 Tbsp mild or hot curry paste (I got the hot because that was my only option....next time I will add more of this to give it more of a kick)
1 cup low-sodium chicken broth
1/2 cup frozen green peas not thawed (I used canned peas because I already had it)
2 Tbsp chopped fresh cilantro (If I had it my way cilantro would be on EVERYTHING I love it)
Sea salt and fresh ground black pepper, to taste
Cook rice according to package directions
Meanwhile, heat oil in a large skillet on medium-high. Add scallions and garlic and cook for 1 minute, stirring frequently. Add chicken and cook for 2 minutes, stirring frequently, until golden brown on all sides
In a small bowl, whisk curry paste into broth. Add curry mixture to skillet and bring to a simmer over same heat. Simmer for 2 minutes, until chicken is cooked through. Add peas and cook for 30 seconds, until just tender. Remove from heat, stir in cilantro and season with salt and pepper. Serve over rice.
I absolutely love the book and have many pages marked to try soon. At the end of each recipe they have nutritional information on the meal you just cooked, which is great if you are numbers person!!!!
